Don't forget to take your pick of sizes and shapes of wild mushrooms at your local markets or the Boqueria. A rain summer and fall has lead to some great ones. Large or small, wash them well, cut them into fork full sizes stick them in a pan and let them cook in their own juices that come out as you heat them, add garlic, and parsley or whatever you'd like.
